- Michel Fonné uses different subsoils for different varieties from Riesling to Pinot Gris to Gewürztraminer.
- Grapes from different parts of the vineyards are harvested by hand and processed separately to preserve the characteristics of their soils.
- He doesn’t use pesticides. A special species of friendly mites fights with pests.
He also uses a traditional method for producing champagne, which helps him create a lively and refreshing sparkling wine. We especially recommend his wines in the Grand Cru series. An exceptional soil is reserved for them, which consists of elements of marble, limestone, granite, calcium, and magnesium.
